This raw kale salad is so easy to make & is one of my favourite go to quick recipes.
This simple recipe is so delicious you really need to trust me & just give it a try because it is so good for you & easy to make.
- Bag of Kale (250g)
- 4 Limes
- 5 tablespoons of tahini
- 2 tablespoons of olive oil
- 1 cup of pomegranate seeds
- Sea salt & black pepper to taste
Remove all the stalks from the kale leaves & rinse thoroughly. Pour the juice from all the limes over the raw kale leaves.
Add the tahini, olive oil & use your hands to firmly massage the dressing thoroughly & evenly for a few minutes. During this time you will feel the leaves soften & wilt.
Add the pomegranate seeds & sea salt & pepper.
Kale is one of the supreme kings of the super food Greens & is one of the most nutrient dense foods on the planet.
Kale contains vitamins A, K, C, B6, & manganese, calcium, copper, potassium & magnesium. As well as iron & phosphorous.
Kale also contains the powerful antioxidants quercetin & kaempferd. These help counter act oxidative damage & research suggests they have powerful cardio protective anti-inflammatory, anti-viral, blood pressure lowering, anti-depressant & anti-cancer effects etc.
Using the lime juice adds additional vitamin C to the dish as well as activating the breaking down of the enzymes in the kale leaves.
The tahini provides additional plant protein and delicious flavour.
This is the perfect dish if you want to make something quickly & have limited time. It also tastes even better the next day so is a great food to have on the go.
This dish also tastes delicious with avocados or roasted vegetables.
