Sweet potato, lime and coconut soup with chilli and crispy shallots

This makes such a delicious, nourishing, soup & perfect seasonal dish for vegans & gluten free


  • Tablespoon of coconut oil
  • 1 medium red onion, chopped
  • 2 teaspoons of grated ginger
  • 1 kg sweet potato
  • 750 ml vegetable stock
  • 400 ml coconut milk
  • 1 tablespoon of lime juice
  • 1 tbsp. of chopped lemon grass
  • 1 bulb of garlic chopped
  • Fresh coriander to garnish
  • 1 large red chilli finely chopped de-seeded
  • 1 shallot


 Heat the coconut oil in a saucepan , add the chopped onions & garlic cook

Till soft. Then add the chopped sweet potato & stock & bring to the boil. Turn down to simmering add the chopped lime grass, lime juice

Remove from the heat. allow the mixture to cool before adding the coconut milk & then either pour into a food processor or use a hand held processor until you have a smooth consistency.

Serve & garnish with coriander fresh chilli & crispy shallots.

Sweet potatoes are loaded with fibre, vitamin A & potassium. They also contain a lot more vitamin C than a standard white potato.

Red onions provide a great health boost as they contain quercetin, allicin & chromium which helps balancing blood sugar levels, & naturally offers protection against hay fever & has anti-fungal properties.


Lemongrass is a good source of vitamins A, B & C. It also contains essential minerals such as potassium, calcium, magnesium. is a source of antioxidants & plant flavonoids.

The lime juice adds a citrus flavour, stimulates the digestive system, is a source of vitamin C, thiamin, & folate. It also provides calcium, iron, & potassium.

Garlic belongs to the licaceae family is an excellent source of B6, manganese, selenium & vitamin C. a good source of phosphorous, copper & iron.


This dish is packed full of flavour & antioxidants & is really satisfying.
