Delicious Vegan Gravy

This is one of the best clean eating & tasty vegan gravy recipes I have ever had the pleasure of tasting. All the ingredients are fresh & clean.

Ingredients

Ingredients

  • 2 sweet potatoes
  • 2 red onions
  • 1 tsp tomato paste
  • 1 stock of celery
  • 2 garlic cloves
  • 25ml balsamic vinegar
  • 250ml mushroom water
  • ½ tablespoon of turmeric
  • I pinch of nutmeg
  • 1 pinch of cumin
  • 1 pinch of ground cardamom
  • Salt & cracked black pepper to taste

Instructions
Start by soaking a handful of dried mushrooms in hot water for an hour.
Peel and boil the sweet potatoes until soft.
Sweat the onion until soft.
Mash your potato and add the turmeric, spices & add cooked onions & balsamic vinegar.
Add the mushroom water into the mixture & combine with your hand food processor until you have a smooth gravy consistency. Add salt & pepper to taste & serve hot.

Benefits
Sweet potatoes are a fantastic source of vitamin A, which comes from the beta-carotene. They contain more vitamin C than standard white potatoes & manganese, copper, pantothenic acid & B6.
They are also a great source of dietary fibre, potassium, & B vitamins.
Red onions contain lots of fantastic vitamins & minerals including B vitamins, calcium, potassium, magnesium, & vitamins A & K. They benefit you because they have photo-chemicals which aid the absorption & function of vitamin C, which helps improve the bodies ability to fight infections & strengthens are immunity & fights inflammation.
They also contain chromium, which plays an important role in blood sugar regulation.
Balsamic vinegar contains antioxidants & helps digestion. It is also low on the glycemic index & it has been proven to be stabilizing for cholesterol levels. It is made from pressing fermenting grapes. It ages in wooden barrels, & it contains an array of vitamins & minerals including vitamins A, C, D,E & B vitamins. Iron, magnesium, potassium, zinc, copper, selenium to name a few.
Turmeric with black pepper is nature’s natural ibupofen & is an excellent source of iron & manganese.
Mushroom water was used for its wealth of health benefits & added flavour. They are packed with many wonderful antioxidants & selenium & vitamin D.
I wanted this gravy to incorporate as many tasty healthy benefits as possible. You may mistake the rich flavour as anon-vegan gravy. However it is so much better!
