Blueberry Banana muffins

These are a delicious & healthy way to start your day & they are perfect for children to snack on after school & before dinner. They are gluten, dairy & sugar free.

Time to bake: 45 minutes     Makes: 12 muffins

Ingredients

  • 4 ripe bananas
  • 2 cups of blueberries
  • 1 cup of almonds or brown rice flour if you have a nut allergy
  • 1 cup of flaxseeds
  • 1 cup of gluten free oats
  • 1 tsp of bicarbonate of soda
  • ½ cup of apple juice
  • ½ cup of water
  • ½ cup of maple syrup
  • 2 tsp of cinnamon

Instructions

  1. Preheat the oven at 180C.
  2. Place the almonds, flaxseeds, cinnamon & oats in a food processor & blend until you have a smooth flour like consistency.
  3. Mash all the bananas & add the apple juice, water & maple syrup to the bowl. I washed the blueberries & gently dried them with a towel, then lightly dusted them with potato starch to ensure they are fully dry.
  4. Gently fold all your ingredients into one bowl & transfer into muffin trays.
  5. I would use coconut oil if your trays are non-stick.
  6. Bake for around 35-40 minutes & allow 5 minutes before you enjoy!

 

These muffins are sugar, gluten & dairy free and made from only natural wholesome ingredients your body will love.

Bananas are loaded with potassium which is essential for every cell in your body & maintaining fluid balance, keeping your brain, heart, nerves & muscles functioning well. Bananas can help overcome depression due to their high levels of tryptophan, which is converted into serotonin — the happy-mood brain neurotransmitter.

Blueberries are a powerhouse of antioxidants & a good source of vitamin K. They contain fibre, vitamin C & E along with manganese.

Flaxseeds are an amazing food & I try added them to every dish possible. Studies have shown that they may help fight heart disease, diabetes & breast cancer. They are a good source of omega-3 fatty acids, lignans, which have fantastic antioxidant qualities & fiber.

Cinnamon is excellent for balancing blood sugar levels & really more flavor to these delicious muffins.
