These are a delicious & healthy way to start your day & they are perfect for children to snack on after school & before dinner. They are gluten, dairy & sugar free.
Time to bake: 45 minutes Makes: 12 muffins
- 4 ripe bananas
- 2 cups of blueberries
- 1 cup of almonds or brown rice flour if you have a nut allergy
- 1 cup of flaxseeds
- 1 cup of gluten free oats
- 1 tsp of bicarbonate of soda
- ½ cup of apple juice
- ½ cup of water
- ½ cup of maple syrup
- 2 tsp of cinnamon
- Preheat the oven at 180C.
- Place the almonds, flaxseeds, cinnamon & oats in a food processor & blend until you have a smooth flour like consistency.
- Mash all the bananas & add the apple juice, water & maple syrup to the bowl. I washed the blueberries & gently dried them with a towel, then lightly dusted them with potato starch to ensure they are fully dry.
- Gently fold all your ingredients into one bowl & transfer into muffin trays.
- I would use coconut oil if your trays are non-stick.
- Bake for around 35-40 minutes & allow 5 minutes before you enjoy!
